Warm Up & Boost Your Immunity with this Easy & Delicious Recipe!
Carrot Ginger Soup
Adapted from loveandlemons
1 tablespoon extra virgin olive oil
½ medium yellow onion, chopped
½ teaspoon sea salt
3 garlic cloves, smashed
1 pound carrots, roughly chopped
1 teaspoon grated fresh ginger
1 tablespoon apple cider vinegar
3 cups vegetable broth
salt & pepper
1 can coconut milk
1 teaspoon maple syrup, optional
⅓ cup cashew cream or vegan sour cream
In a large pot or dutch oven, add the chopped onion, olive oil, salt & pepper. Cook for about 5 minutes until softened. Add the garlic and carrots and cook for 10 minutes, stirring occasionally.
Stir in the ginger, apple cider vinegar, and broth.
Bring to a boil, then reduce the heat and simmer for 30 minutes.
Let cool slightly and transfer to a blender. Blend until smooth.
Transfer back to the pot and add in coconut milk and maple syrup. Add any additional seasoning needed.
Top with cashew cream/vegan sour cream.
